Venison French Rack with Whiskey Glaze: Part 1 (Glaze Recipe)
Ingredient List:
1/2 cup unsalted butter
1/3 cup canola oil
1 cup minced onion
2/3 cup catsup
2/3 cup bourbon
1/2 cup apple cider vinegar
1/2 cup orange juice
1/2 cup pure maple syrup
1/3 molasses
2 tbsp. Worcestershire sauce
1/2 tbsp. cracked black pepper
1/2 tsp. liquid smoke
1/2 cup salt
1 tbsp. orange peel, finely grated
Assembly Instructions
  • Melt butter in large saucepan over medium heat.
  • Add oil and heat for 2 minutes
  • Add onion and sauté until pale golden
  • Add catsup, bourbon, vinegar, orange juice, maple syrup, molasses, worcestershire sauce, pepper, liquid smoke, and salt.
  • Bring to simmer, stirring frequently
  • Reduce heat to medium-low and cook until mixture is thick and glossy, stirring occasionally.
